His love for Nikkei cuisine led him to Peru, where he undertook a deep dive into the country’s unique flavours, profoundly influencing his cooking style. Chef Stasinos’s culinary philosophy emphasises simplicity and high-quality ingredients treated with respect and minimal intervention.
